6 sweet peppers, green or red, or three of each colour, diced
1 quart diced onions
1 quart diced celery and leaves
1 quart tomato juice


At least 4 quarts ripe tomatoes, peeled and quartered.
3 tbsp salt
2 tbsp sugar
1/2 tsp pepper

Directions:
Directions:
1. Simmer the peppers, onions, celery and tomato juice for 20 minutes.
2. Add the tomatoes, salt, sugar, and pepper

Note: I add more than 4 quarts of tomatoes, depends on how thick you want it.

3. Bring to boil and put in hot jars. Process in boiling water 40 minutes for quarts, 30 minutes for pints.
