1 lb. carrots, grated or shredded
1 small onion, finely diced
1 cup matzo meal
1/2 teaspoon sal
3/4 cup margarine or butter melted

Directions:
Directions:
Mix all ingredients in a bowl. Put on sheet of aluminum foil and form into a loaf. Envelope the loaf in foil. Twist ends of foil. Bake on cookie sheet or in a Pyrex pan at 400 º for one hour.

Can also put in muffin tins, tightly covered with foil. Can make, refrigerate and then broil tops for a bit of crunch.
