½ cup brown sugar
1 ½ tsp cinnamon
1 large apple, peeled and diced
½ cup blueberries
½ tsp cinnamon
½ cup butter, softened
2/3 cup granulated sugar
2 eggs
2 tsp vanilla extract
1 ½ cup flour
½ tsp salt
1 ½ tsp baking powder
½ cup milk

Directions:

Preheat oven to 350°F. Grease and flour a 9” bread pan.

In a small bowl, mix brown sugar and cinnamon. Set aside.

In a small bowl mix the apples, blueberries and ½ tsp cinnamon. Set aside.

In a medium bowl, cream butter and sugar until well combined. Add eggs and vanilla mixing well. Mix in flour, salt and baking powder. Stir in milk.

Pour half of the batter into prepared loaf pan. Top with half of the apple and blueberry mixture. Sprinkle half to the brown sugar and cinnamon mix on top of apples. Pour in the remaining batter, followed by the remaining apple mix. Top with the remaining brown sugar mixture.

Bake 50-70 minutes. Let cool in pan for 10 minutes, then transfer to a cooling rack.

Can be prepared in 4 smaller 6 x 2 ½” pans. Bake for 35-40 minutes.

Can be prepared as muffins, about 15-16. Bake for 25-30 minutes.
