10 cups of minced zucchini
1 cup pickling salt
5 cups of minced onion
1 cup diced celery
3 green peppers, diced
2 sweet red peppers, diced
2 tsp. turmeric
1 T. dry mustard
3 T. celery seed
6 cups sugar
5 cups white vinegar
3 T. cornstarch.

Directions:
Directions:
1. Prepare peeled zucchini.
2. Combine with salt and other vegetables.
3. Allow to stand 6 hours or overnight.
4. Drain, rinse thoroughly and drain again in colander.
5. Press bowl down on top of vegetable mixture to force out as much liquid as possible. 6. In large pot, combine remaining ingredients, add vegetables and bring to a rolling boil.
7. Reduce heat and boil gently for 20 minutes.
8. Ladle relish into hot sterilized jars and seal.
