BLT Potato Salad Recipe

2 ½ lbs yukon gold potatoes peeled & cut into ½ inch square pieces
¼ cup white wine vinegar
salt & pepper
8 slices bacon, cut into 1 in. pieces
¾ c mayonnaise
7 scallions
2 T dill pickle relish
1 romaine lettuce heart cut into 1 in. pieces
12 oz. cherry tomatoes, halved
¼ c coarsely chopped fresh chives

Directions:
Directions:
1. Place potatoes in large saucepan and cover with cold water by 1 inch.
2. Add 2 T vinegar & 2 T salt and bring to a boil over medium high heat.
3. Reduce heat to med-low and simmer until potatoes are tender, 12-16 minutes.
4. Drain, transfer to bowl, and toss potatoes with 1 T vinegar.
5.Let potatoes cool for 10 minutes.

6. While potatoes cook, cook bacon over medium heat until crispy, about 6 minutes.
7. Transfer bacon to paper towel-lined plate; set aside

8. Whisk mayonnaise, scallions, relish, remaining 1 T vinegar, ½ tsp. salt & 1/8 tsp pepper in large bowl until combined.
9. Fold in lettuce, tomatoes, chives, potatoes and bacon.
