"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
Ingredients:
1 - 4½ lbs. whole chicken
½ fresh lemon, cut in half
¼ whole onion, chopped
2 tsp. thyme
1 tsp. rosemary
olive oil spray
1 tsp. thyme
1 tsp. onion powder
1 tsp. garlic powder
salt and pepper to taste

Directions:
Directions:
Rinse the chicken and take out the giblets that are in inside it. Stuff the cut lemon and chopped onion inside the cavity of the chicken along with the rosemary and thyme. Make sure the chicken is completely dry on the outside. Pat dry with paper towels if necessary. A dry chicken will help it crisp in the air fryer with the olive oil. Spray olive oil onto sides of the chicken and all over. Sprinkle the seasonings throughout and onto both sides of the chicken. Place the chicken into the air fryer basket with the breast side down. Cook for 30 minutes at 330º. Open the air fryer and flip the chicken over. Re-assess more seasoning if needed. Cook for another 20-25 minutes or until a internal thermometer reads 165º. Remove the chicken from the air fryer and place it on a plate to rest for at least 15 minutes before cutting into the chicken.
