For a small amount of beets

2 cups vinegar
1 cup of water beets were cooked in
1 ½ cups of brown sugar
1 tsp. pickling salt
*1 tsp of pickling spice

For 5-6 quarts of beets

4 cups of vinegar
2 cups of water beets were cooked in
3 cups of white sugar
2 cups brown sugar
2 tsp. pickling salt
*1 T. of pickling spice

Directions:
Directions:
Boil a quantity of beets. Cook and save some of the water they were cooked in. When cool slip skins off and cut beets into pieces.

Boil up the ingredients depending on how many beets you have. If you like spice, tie the pickling spice in a piece of cotton and boil in the syrup for a couple of minutes or until it’s as spicy as you like. (I just leave the bag in until I begin to bottle.) Return beets to syrup and bring to a boil. Bottle in sterile jars.
