1 lb. white fish filets (tilapia, cod, pollock or any solid white fish)
1 c. flour
1 tsp. garlic powder
1 tsp. onion powder
1 T. kosher salt
1 tsp. freshly ground pepper
2 lg. eggs, beaten
3 c. panko bread crumbs

Oil for frying; enough to make about 1 inch deep in your skillet.

Cut the fish filets according to how you will serve them; chunks for fish nuggets, 1x4 inch strips for fish tacos, or squares for fish sandwiches. In a large resealable plastic bag, combine the flour and seasonings. Seal the bag and shake to combine. Add the fish and shake to coat.

Put the eggs and panko in separate shallow bowls. Dip the coated fish in the egg, then in panko, then transfer to wax paper- lined platter.

Heat the oil to 350º in a large deep skillet. Add fish in batches (do not crowd) and fry turning once until golden brown. Drain on paper towels. Repeat until all fish is fried.

Serve in tortillas with avocado slices and shredded lettuce; in hamburger buns with tartar sauce or mayo, lettuce and tomato; or as is with cole slaw and fries.
