2 Tbsp. unsalted butter
2 Tbsp. green peppercorns, crushed
⅓ cup cognac/brandy
1½ oz. Demi Glace Gold* (~2 Tbsp.)
1 cup hot water
½ cup heavy cream

* Demi Glace Gold is a concentrated (4x) demi-glace stock.

Melt butter and add peppercorns and cognac. Boil gently until reduced by half.

Add the Demi Glace and hot water. Bring to a boil, stirring well to dissolve the Demi Glace. Continue to boil until the mixture is reduced by ¼ or a ⅓. (It can be made ahead to this point - just reheat before continuing.)

Add the cream just before you are ready to serve, stirring while heating through.
