1/4 cup any Texas Pete wing sauce
6 ears fresh roasted corn, cut off the cob, or frozen corn
3 T. Butter
1 small chopped onion
1 clove garlic, minced
3 eggs
1 c. Cream
1/2 c. Milk
1/2 t. Nutmeg
Salt and pepper to taste
1 c. Shredded pepper jack cheese
1 c. Diced red bell pepper
2 T. Chives, chopped

Directions:
Directions:
Preheat oven to 350º.

Melt butter in skillet and sauté the onion for a minute, add garlic, corn and bell pepper and sauté til onions have softened.

Whisk together eggs, cream, milk, wing sauce, nutmeg, salt and pepper. Stir in the corn mixture and cheese.

Pour into baking dish, and bake until set, about 45 minutes.

Garnish with chives and rest 10 minutes.
