4 T olive oil
1/2 Cup sliced onions.
5 Cups sliced Zucchini
4 minced garlic cloves
12 oz shrimp
Fresh spinach
Salt
1/8 to 1/4 t Red Pepper Flakes
2 t dried oregano
1 1/2 Cup grape tomatoes
2 Cup cooked quinoa
Parmesan (optional)

Directions:
Directions:
Heat olive oil in skillet add sliced onions and sauté. Add zucchini and cook till starts turning golden, 2-4 minutes. Add the garlic and shrimp. Cook until the shrimp turns pink about 2 minutes. Add couple handfuls of fresh spinach. Add salt to taste, red pepper flakes, oregano and tomatoes. Cook until the tomatoes soften, 2 minutes. Serve over Cooke quinoa.
Can top with fresh Parmesan.
