4 slices of thick bakery bread (I prefer Brioche)
2 tsp mayonnaise (low fat is good too)
2 tsp fig or apricot jam (I've used rhubarb or apple)
Sliced cooked chicken breast
Brie cheese (3 or 4 slices per sandwich)
2 tbsp balsamic onions (one per sandwich)
One ripe pear, unpeeled, cored & thinly sliced
4 leaves butter lettuce (2 per sandwich)

Onions:

3 small red onions
1/4 cup plus 2 tablespoons good balsamic vinegar
1/4 cup good olive oil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Onions: (makes enough to double the number of sandwiches)

Preheat the oven to 375 degrees.
Cut the onions in half and slice 1/4 inch thick. Place on a baking sheet and toss with 1/4 cup balsamic vinegar, the olive oil, salt, and pepper. Bake for 10 to 12 minutes, until the onions are tender. Remove from the oven, toss with 2 more tablespoons balsamic vinegar.

For Sandwiches:


Arrange the slices of bread on the work surface.
Spread the mayo lightly on one slice and jam on the other.
Place the chicken slices on the mayo side of each pair, covering the bread. Top with Brie slices.
Spread out the balsamic onions over the layer of Brie. Top with pear slices. Add two leaves of butter lettuce per sandwich.
Put the jam-covered bread slice on the sandwich, jam side down. Slice into two triangles

The balsamic onions make enough to garnish 4 sandwiches comfortably or 6 sandwiches with lighter application.

These sandwiches pair particularly well with a chilled, crisp, Gewürztraminer or un-oaked Chardonnay wine.
