4 T. butter
1-1˝ T. lemon juice
Fresh pepper

Fish:
10 oz. fresh haddock (or sole)
S&P
2-3 T. flour
2-4 T. oil

Directions:
In a small pot, melt the butter on med-low heat. Whisk 3–5 minutes waiting for it to turn amber-brown and start to smell “nutty”. Be careful not to burn it. Pour into a small serving bowl and mix with lemon juice and pepper. Set aside.
Pat the haddock dry with paper towel. Season and coat lightly with flour, brushing off excess. Pre-heat a heavy frying pan (such as cast iron). A few drops of water should sizzle when the pan is hot enough. Add some oil to the pan. Add fish fillets and cook for 1˝-2 minutes. Use a spatula to try and “move” the fillets. If they don’t want to slide in the pan, they aren’t ready to be flipped. Try every 15 seconds or so. As soon as they’re sliding, flip them. Once flipped, add a bit more oil and cook another 1˝ minutes. Repeat the slide test until they are ready. Serve with 1-1˝ T. of butter sauce poured over top. Can serve with lemon wedges. Serves 2.
