1/4 c. lime juice
1/4 c. orange juice
2 Tbsp. olive oil
1/2 tsp. salt
1 tsp. minced garlic (or 1/4 tsp. powder)
1 tsp. minced onion
3/4 tsp. cumin
3/4 tsp. oregano
1/2 tsp. pepper
1/2 tsp. cilantro (optional)

1 1/2 lb. raw chicken breast, cut into strips
sliced onion (I use about 1/4 or less of one onion)
1-2 bell peppers, any color

Directions:

Mix all the juice, oil, and spices.

Slice onion and pepper, cover with 1/4 c. marinade mixture.

Pour the rest of the marinade over the sliced chicken. Cover each container and refrigerate 30 min. or longer.

Cook chicken in large skillet on med-high until slightly browned (3 min). Remove from skillet. Add pepper and onion and saute until tender. Return chicken to skillet and cook 2-3 min. or until cooked through. (I always cook for way longer than this bc it’s nowhere near done in those few minutes).

Serve as fajitas or use leftovers as toppings for nachos.

My boys love this and eat the chicken like crazy. They eat it as a fajita, or plain, they even sneak it cold from the fridge if I double the recipe and have leftovers.
