Garlic Lime Chicken Fajitas Recipe

Ingredients: 1/4 c. lime juice 1/4 c. orange juice 2 Tbsp. olive oil 1/2 tsp. salt 1 tsp. minced garlic (or 1/4 tsp. powder) 1 tsp. minced onion 3/4 tsp. cumin 3/4 tsp. oregano 1/2 tsp. pepper 1/2 tsp. cilantro (optional)
1 1/2 lb. raw chicken breast, cut into strips sliced onion (I use about 1/4 or less of one onion) 1-2 bell peppers, any color

Directions:Mix all the juice, oil, and spices.
Slice onion and pepper, cover with 1/4 c. marinade mixture.
Pour the rest of the marinade over the sliced chicken. Cover each container and refrigerate 30 min. or longer.
Cook chicken in large skillet on med-high until slightly browned (3 min). Remove from skillet. Add pepper and onion and saute until tender. Return chicken to skillet and cook 2-3 min. or until cooked through. (I always cook for way longer than this bc it’s nowhere near done in those few minutes).
Serve as fajitas or use leftovers as toppings for nachos. |

Notes: My boys love this and eat the chicken like crazy. They eat it as a fajita, or plain, they even sneak it cold from the fridge if I double the recipe and have leftovers.
