1 (16 oz.) box confectioner sugar
1 stick margarine or butter, softened
1½ tsp. vanilla
1 tsp. milk
¾-1 cup of coconut
Cinnamon

Directions:
Directions:
Sift confectioners sugar into a bowl. Add butter, vanilla and milk, mix well.

Add coconut and knead until coconut is mixed in and dough is smooth.

Shape into miniature potatoes (cigar shaped). Roll in cinnamon.

Store in airtight container.

This is a treat from Ken's childhood where they got them from Wockenfuss Candy Store. It is called sweet potato candy because of its shape and color. It is an Irish candy. He always talks about attending a church bake sale and as he reached for the last sweet potato candies "Marge" swooped in and grabbed them. Haha. Even though this is Ken's recipe don't be fooled that he makes them. My sister-in-law Anna Englestad actually gave me this recipe so I could make Ken sweet potato candies whenever he wanted them.
