8 medium Ontario potatoes peeled
4 large Ontario carrots cut into 3 inch strips
1 bunch Ontario broccoli (1 to 2 lbs) cut into serving pieces
1/2 c butter
1/2 tsp salt
1/8 tsp pepper
1 tbsp lemon juice
2 green onions chopped
1 tbsp chopped fresh parsley

Steaming is an excellent cooking method for this recipe, as vegetables tend to keep their firmness and shape after cooking and may easily be lifted from the cooking pot to the serving platter. To steam, place vegetables on a metal steaming rack over about 1/2 inch of boiling water and cover the pot. In a large steamer, steam potatoes for 15 minutes. Add carrots. Continue steaming for for 10 minutes. Remove potatoes and carrots to a heated serving platter and keep warm. In the steamer, steam broccoli for 10 minutes. Arrange broccoli on serving platter with potatoes and carrots. While broccoli is steaming melt butter, add salt, pepper and lemon juice. Just before serving, add chopped green onion and spoon sauce over vegetables. Garnish with chopped parsley.
