1 cup cottage cheese (or farmer's cheese)
1/4 cup all-purpose flour
2 tbsp caster sugar or granulated sugar
1 tbsp vegetable oil, and some more for cooking
1 large egg
½ tsp vanilla extract
1/4 tsp baking powder
icing sugar, raspberries
Optional:
raspberry jam, sour cream, to serve.

Directions:
In a large bowl, beat together cottage cheese, flour, egg, oil, baking powder, vanilla extract and sugar with an electric mixer until all ingredients are well combined.
In a large skillet, heat oil over medium heat.
Prepare a dry non-stick surface and dust with some flour.
Using a tablespoon, scoop the batter and roll on the floured surface, for the flour to lightly cover the pancake. If there is too much flour, carefully dust it off.
Continue with the rest of batter.
Transfer prepared pancakes to the heated skillet and cook for about a minute each side until golden-brown.
Serve with sour cream and raspberry jam.
