4 - 6 med - large whole beets

Pickling Liquid:
2 cups sugar
2 cups vinegar
1 tsp Allspice, whole
2 cups water
1 tsp cloves, whole
1 tsp cinnamon

Directions:
Directions:
Roast or boil beets until tender (1 to 1 1/2 hours). Cool. Remove skin. Cut into bite size pieces or rounds (or whatever shape you want)

Boil pickling liquid for 5 min

Pour liquid over the beets in a sealed container.

Keep in refrigerator up to 3 months.
