2 cups all-purpose flour (gluten-free works well, too)
1/4 cup sugar
1 cup cold butter

FILLING:
2 cups sugar
7 tablespoons all-purpose flour
1 cup heavy whipping cream
3 large eggs, room temperature, beaten
5 cups finely chopped fresh or frozen rhubarb, thawed and drained

TOPPING:
6 ounces cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
1 cup heavy whipping cream, whipped

Directions:
Directions:
1. Preheat oven 350 F.
2. In a bowl, combine the flour and sugar
3. Cut in butter until the mixture resembles coarse crumbs.
4. Press into a greased 13x9-inch baking pan.
5. Bake at for 10 minutes.
6. Meanwhile, for filling, combine sugar and flour in a bowl.
7. Whisk in cream and eggs.
8. Stir in the rhubarb.
9. Pour over crust.
10. Bake at 350° until custard is set, 40-45 minutes.
11. Cool.
12. For topping, beat cream cheese, sugar and vanilla until smooth
13. Fold in whipped cream.
14. Spread over top.
15. Cover and chill.
16. Cut into bars.
17. Store in the refrigerator.
