1/2 C Olive Oil
1/3 C Soy Sauce
Juice of 2 Limes
1 Tsp Red Pepper Flakes
1/2 Tsp Freshly ground Cumin
4 Green Onions chopped
3 Tbsp Brown Sugar

2 - 3 Lb Skirt Steak (Inside If Available) Cut into 3 pieces

1 Tbsp Vegetable oil
4 Small Onions- wedged
2 Small Red and Green Bell Peppers, sliced
Tortillas
*Salsa Fresca or Pico De Gallo
*Budro's Guacamole

1. Combine the first 7 ingredients in a Blender until smooth.
2. Pour marinade into gallon size Zip-Loc bag. Add the Skirt Steaks to bag and seal. Remove air before sealing and refrigerate overnight or as long as you can up to 24 hours
3. Place Steak on a Hot preheated Grill and cook one side until 125º flip and allow the other side and cook until internal temperature is 145º.
4. Remove from heat and immediately wrap in Aluminium foil and move to low heat part of Grill to keep warm and rest.
5. Heat cast iron Skillet until hot and add.. Toss vegetables in vegetable oil and cook in high hot skillet until softened and browning is evident. Remove and keep warm.
6. Slice Steak across the grain and add to the vegetables and let them marinate. Keep warm until serving.
