2 lbs Ground Beef
4 T Canola Oil
8 Cheese Slices
4 Hamburger Buns

Sauce
1/3 C Mayonaise
2 T Ketchup
2t Mustard - any kind

Toppings
Lettuce, Tomato, Onion, Bacon, Pickles, Mushrooms, Avacado

Directions:

1. Divide the ground beef into 8 equal rounds - like meatballs. Sprinkle with salt & pepper.

2. Heat a large, heavy skillet or griddle until it's very hot, add a a drizzle of oil and place the meat balls on it. Press down with a large, flat heavy object or spatula until they are very flat and thin. Don't worry if they crack and have rough edges - this is a good thing, and will create more crispy patties.

3. Cook the burgers for 4-5 minutes, until they've developed a nice bottom crust. Flip with a spatula, top with cheese and cook for a few minutes on the other side.

4. Serve two smashed patties with each burger.

Sauce
In a small bowl, stir together the mayonnaise, ketchup and mustard. Spread over the buns and tuck in your burgers and top with any toppings with extra condiments you like.
