Ingredients: 1/2 stick butter 2 cups sweet potatoes, cooked and mashed- about 4 big ones 2 eggs 1/2 cup milk 1 tsp vanilla 1 can medium crushed pineapple, drained 1 cup sugar Mix all of this and pour into casserole dish 1/4 cup flour 1/2 cup sugar 1/2 stick butter 1 egg Mix this and pour on top of potatoes. Bake about 45 minutes at 350.

Notes: This is one of my Mom's recipes so I have to use my secret decoding ring to figure it out. I know that it's way too sweet for a side dish so I cut way back on the sugar. As for the butter? I think you probably melt it. I haven't made it in quite awhile but it really is delicious. Good Luck! After making this again I decided to use graham cracker crust with fresh crushed pineapple. Everything else the same but even less sugar. Made in 9x9 .Those Southern. Sweet potato potato casseroles with the marshmallows a bit overwhelming for me as side dish. But this souffle thing is a nice dessert. Don't tell anyone what I said about marshmallow thing. They might think I'm from PA or somewhere.
