The best time to season a cast-iron pot is after washing and drying it. Lather a thick layer of unsalted vegetable oil over the inside of both pot and lid. Cover the pot with the lid and bake it in a 250-degree oven for 90 minutes. Swab the grease around occasionally with a dry cloth to keep the surface of the pot evenly coated. It might be wise to set the pot on a cookie sheet to prevent any grease from dripping onto the oven. After YOU remove the pot, let it cool, then wipe out any excess oil with a cloth. Buff the pot to a sheen with a clean dry cloth and it should be ready for us.
