2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter, cooled
2 teaspoons vanilla
2 cups "instant" pancake mix
1 teaspoon cinnamon
butter for greasing griddle or frying pan

Directions:
Directions:
Heat griddle to 350ºF and oven to 200ºF. Whisk egg whites and buttermilk together. Set aside. In a separate, whisk egg yolks, vanilla, and butter together. Set aside. In a separate bowl, mix pancake mix and cinnamon. Add egg mixtures to pancake mix. Whisk together until just combined. Lightly butter griddle or frying pan. Ladle ¼ cup batter onto griddle. Sprinkle with fruit, if desired. When bubbles set and edges are brown, flip and cook for 2-3 minutes. remove from griddle and serve or keep warm in oven on towel-lined baking sheet for up to 15 minutes.
