8-10 ripe tomatoes - or equivalent amount of cherry tomatoes (1 10 cups quartered)
5-6 cloves of garlic
1 onion
1-2 peppers - your choice of sweet or spicy
basil and oregano to taste
salt and pepper to taste
olive oil
balsamic vinegar

Directions:
Directions:
Preheat oven to 400 º.
Wash and quarter tomatoes to make approximately 10 cups.
Quarter the onion.
Slice the pepper(s).
Cut garlic cloves in half.
Place these ingredients into a large roasting pan.
Drizzle with olive oil and balsamic vinegar. Be generous with both.
Place in the oven and roast for 45 - 60 minutes. Some items should be charred.
Remove from the oven and let cool. Add oregano, basil and salt and pepper.
Once cooled, transfer batches into a blender with a slotted spoon (or transfer to a deep bowl and use an immersion blender)
Blend until smooth, adjust seasonings if necessary.
