1½ cups canola oil
2 cups brown sugar
4 eggs
3 cups raw carrots, grated
2 cups flour
2 tsp. baking powder
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
½ cup pecans, chopped
½ cup raisins

Frosting:
8 oz. cream cheese, at room temperature
2 cups icing sugar
4 Tbsp. soft butter
2 tsp. vanilla

Directions:
Directions:
Combine oil and sugar. Beat in the eggs, one at a time. Add raw carrots. Sift dry ingredients together and add raisins and pecans. Fold into wet mixture. Bake in layer cake pans 35-40 minutes at 350ºF.
Cool.

Soften cream cheese to room temperature and combine with butter, icing sugar and vanilla. Beat together until fluffy and spread on cooled cake.
