3 cups cooked squash, salted to taste
2 tbs. chopped onions
3 tbs. melted butter or margarine
2 cups cornbread crumbs
3 eggs slightly beaten
Bread or cracker crumbs (enough to roll croquettes)

Directions:
Directions:
Drain cooked squash and mash. Add cornbread crumbs, onion, melted butter, and eggs. Mix well. Shape mixture into croquettes (balls, cone, or cylinder shapes). Roll each croquette in bread or cracker crumbs. Fry in a heavy frying pan, Using plenty of oil or fat ( best to deep fry them). Cook until browned on all sides. Drain on paper towels.
