6 cups of cubed, peeled red potatoes
1 cup of chopped celery
1 cup of scraped and thinly sliced carrot
½ cup finely chopped onion
4 cups of water
2 t dried parsley flakes
3 chicken flavored bouillon cubes
2 t salt
¼ t pepper
3 cups of milk
5 T flour
¾ lb. process cheese, cubed
or 1 stick of butter

Directions:
Directions:
Combine the first 9 ingredients in a dutch oven. If using margarine, add at this time. Bring to boil. Cover, reduce heat and cook until vegetables are tender. Mix flour with ¼ cup of milk, making a smooth paste. Add remaining milk to the paste. Mix well. Stir into soup. If using cheese, add at this time. Cook over medium heat until soup is thickened. Yields: 10 cups
