1 pkg. cornbread mix (8 1/20z)
1 cup mayonnaise
1 large egg
1/4 cup sweet pickle juice
1/3 c. milk
4 med tomatoes (peeled & chopped)
1 green bell pepper (chopped)
1/2 sm. onion (chopped)
1/2 c. sweet pickle, (chopped)
9 slices of bacon (cooked & crumbled)

Combine cornbread mix, egg, and milk. Spoon into an 8 " square pan and bake at 400 degrees for 20 minutes. Cool, crumble, and set aside. Combine tomatoes, bell pepper, onion, pickle, and bacon. Toss gently. Combine mayo and pickle juice. Stir well and set aside. Layer 1/2 each of cornbread, tomato mixture, and mayo mixture in a large glass bowl. Repeat layers with the remaining mixture, making six layers in all. Cover and chill 2 hours before serving.
