COOKIE CRUST:

1 cup unsalted butter; melted

½ cup sugar

2 cups flour

½ teaspoon salt

LEMON FILLING:

2 cups granulated sugar

4 Tablespoons flour

½ teaspoon baking powder

4 eggs; slightly beaten

6 Tablespoons freshly squeezed lemon juice

1 Tablespoon lemon zest


Confectioners' sugar; for dusting

Preheat the oven to 350 degrees.
COOKIE CRUST:
Mix together melted butter, sugar, flour and salt; combine until well blended.
Press evenly into a 9x13x2 inch baking dish.
Bake the crust for 15 to 20 minutes; until very lightly browned.
Let cool on a wire rack.
Leave the oven on.
FILLING: Whisk together the sugar, flour, baking powder, eggs, lemon juice and lemon zest.
Pour over the hot crust and bake for 25 to 35 minutes; until the filling is set.
Let cool to room temperature.
Cut into triangles or squares and dust with confectioners' sugar.
