CRUST: 1 cup flour ½ cup salted cashews; chopped ½ cup sweetened shredded coconut ¼ cup packed light brown sugar
½ cup butter; melted
FILLING: 2- 14 ounce cans sweetened condensed milk ¾ cup key lime juice
16 ounce container whipped topping; thawed 2- 6 ounce containers Key Lime Pie yogurt Few drops green food coloring
1 Tablespoon lime peel; grated ½ cup fresh berries of your choice

Directions:Directions: Preheat oven to 350 degrees. CRUST: In a small bowl; combine flour, cashews, coconut and brown sugar. Stir in butter. Sprinkle into a greased 15x10x1 inch baking pan. Bake 20 to 25 minutes or until golden brown; stirring once. Cool on a wire rack. FILLING: Meanwhile; in a large bowl; beat condensed milk and lime juice with an electric mixer on medium speed until smooth and thickened. Remove 1 cup of the whipped topping and set aside. Fold remaining whipped topping, yogurt and food coloring into milk mixture. Sprinkle half of the cashew mixture into an ungreased 13x9 inch dish. Spoon Key Lime Mixture into the cooled crust and sprinkle with remaining cashew mixture. Cover and refrigerate about 1 hour or until set. Garnish each servings with saved whipped topping; lime peel and fresh berries. |
