½ cup butter; melted

1 cup firmly packed brown sugar


20 ounce can crushed pineapple with juice; drained

⅓ cup tart dried cherries

⅓ cup pecans; chopped

1 Tablespoon Kahlua liqueur


18.2 package Pineapple Cake Mix or Spice Cake Mix

3.4 ounce package vanilla INSTANT pudding and pie filling

4 large eggs

1 cup liquid; remaining juice and enough Kahlua to make one cup.

Preheat oven to 350 degrees.
Melt butter in 12 inch skillet with oven proof handle or cast iron skillet; sprinkle with brown sugar.
Combine pineapple, cherries, pecans and Kahlua; add to skillet.
Set aside.
Combine cake mix, instant pudding, eggs, liquid and oil in a large bowl.
Beat with an electric mixer at medium speed for 2 minutes.
Pour batter evenly over skillet mixture.
Bake 40 to 45 minutes or until toothpick inserted in center comes out clean.
Cool cake completely on wire rack.
Invert onto serving plate.
