Dan’s Pineapple Salmon Recipe

Ingredients for Salmon:
Two 7oz. salmon fillets
Olive oil for drizzling over fish
2 garlic cloves, pressed
McKay’s Cedar Plank Sweet and Smokey Salmon Rub
Freshly ground Pepper

Ingredients for topping:
1½ T. Olive oil
¾ C. white onion, finely chopped
1½ C. fresh or canned pineapple, chopped
1 C. Cherry tomatoes, sliced in half
¼ tsp. salt
⅛ tsp. pepper

Directions:
Directions:
1. Pat each salmon fillet with paper towel, then drizzle both sides with olive oil

2. Spread each fillet with the garlic, top and bottom

3. Season each fillet with the salmon rub. Let it set, while making the topping

4. Chop the pineapple and onion, then slice the cherry tomatoes into halves.

5. Heat 1 T. of the olive oil in a skillet over medium heat. Add the chopped onion and sauté until it becomes translucent.

6. Add in the chopped pineapples, the sliced cherry tomatoes, salt, and pepper. Cook together for about 5 minutes. Don’t overcook or it will become mushy. While the topping is cooking, grill the salmon for 3-4 minutes on each side.

7. Serve the salmon over brown (or white, if preferred) rice, and generously top with the pineapple mixture

Summer of 2021, when Dan and I left our annual camping trip at Antlers and headed to Bandon, Ryan came up to Bandon with us for a week. He he had a great time mountain biking with Raleigh Kraynik (who lived down at the end of Lost Valley Road). They went over to Whiskey Run Mountain Bike Trails nearly every day. After a week, I took Ryan back home, and spent the night at their home on Maple Lane. Sandy and Alan came over that night to celebrate Sandy’s birthday and Fathers Day. We had a delicious dinner of grilled fillet mignonette, baked potatoes, cheesy bread. The next day,I left with Cody to head back to Atwater. When we got to Atwater, Laura and Lou brought the family over, and we had barbecued ribs, macaroni salad, corn on the cob. Laura had made the whole Father’s Day dinner and brought it with her. That was Sunday, Father’s Day. That night, Max and Sam stayed for a sleep-over at Grammy’s with Cody. Monday, the boys swam and played all day, and had another sleep-over. Tuesday, Lou and Rowyn came over, picked us up, and we all headed to the Fresno Zoo. The kids had a great time. We came back to Atwater, I fixed spaghetti dinner, while everyone swam. After dinner, Lou and Rowyn headed back to Los Banos. The next morning, the three boys and I headed to Los Banos. Rowyn had gone to Lisa’s (daycare), and Laura had taken the day off. We headed over to Gilroy gardens. We told the boys we were going to a nursery “garden” to buy plants. They absolutely loved it there and had a great time. We stopped in Gilroy at Black Bear Diner for dinner, then headed home with three exhausted boys. We all spent the night, as the next morning I had a hair appointment. Max and Sam went tomLisa’s while I got my hair done. Cody came with me, and watched his iPad while I had my hair done. Afterward, we picked up Max and Sam and headed back to Atwater. We had another busy day of swimming, for their last sleepover for this trip. The mama kitty, Fluffy (Max had named her), had a kitten that the boys named Oreo. They have been hanging around a lot, and the boys have had fun watching them. The last day, the boys swam and played all day. I ordered pizza, and Mia and Sylvia came over to swim, have pizza, and learn how to keep the cat feeder filled. We’ve hired Mia to do that this summer for us. Laura came over after work and picked the 3 boys up, and took them back to Los Banos for the night, so I could get the house all cleaned and locked up before heading back up to Bandon. Saturday, after making sure everything was locked up and ready to go, I headed out to Los Banos. Laura treated me to a pedicure, and Cody and I left for Loomis. Dan and Crystal had gone to look at a house about 10 that morning, and were just putting in an offer when Cody and I got there about 4:30. They found out at about 10:30 that night that their offer had been accepted. They are selling Maple Lane!
I set my alarm for 5am, and was on the road by 5:20. I stopped in Central Point at Costco for gas, potty, and groceries. I arrived in Bandon at 3. Dan had dinner waiting - this salmon with pineapple topping. It was delicious! And so ended a very busy, but so fun week! 🥰
