1 cup water
1/2 cup butter
1/4 tsp salt
1 cup flour
4 eggs
3/4 cup shredded cheddar cheese
1-2 T sesame seeds

Directions:
Directions:
Heat water, butter, and salt to boiling. Stir in flour. Cook, stirring constantly until mixture is smooth and almost cleans side of pan. Remove from heat. Add eggs one at a time beating well after each. Beat in 1/2 cup of cheese. Drop 1 T of dough one inch apart onto greased baking sheet. Sprinkle with remaining cheese and sesame seeds.

Bake until puffs are firm and golden brown (25-35 minutes). Pierce top of each puff with knife and bake another five minutes.
