2 Small to Medium Redskin or Yukon gold potatoes per person
1 quarter of a small onion chopped per person
½ tbs butter per person
aluminum foil

This recipe lets you make as many or as little as you need. You can also just make one big "foil packet" and grill them all at once.

1) Chop potatoes in bite sized pieces, chop onion in bite size pieces toss both with salt and pepper.

2) Spray a square of foil with cooking spray. Put potato mixture on top. Top potatoes with butter cut into small pieces to sprinkle amongst the potatoes.

3) Wrap the potatoes in the foil in a packet. Take another sheet of foil and cover again to double seal it.

4) Put on grill and cook for approximately 30 minutes on medium to high grill

Elise's variation- you can use olive oil instead of butter. I put the potatoes and onion in ziplock bag a toss with the oil then put on the foil. I will put a very tiny bit of butter on to get it to caramelize. Also Old Bay seasoning is great instead of salt and pepper, for that true Maryland flair to the recipe :-)
