1 cup rolled oats

¾ cup shredded coconut

1 cup flour

1 cup sugar


1 stick butter

1 Tablespoon golden syrup; can substitute maple syrup or honey


2 Tablespoons boiling water

1 ½ teaspoon baking soda

Preheat oven to 350 degrees.
Combine oats, coconut, flour and sugar; set aside.
Melt butter and syrup over gentle heat.
Add boiling water mixed with baking soda to melted butter/syrup.
Pour the liquid into the dry ingredients and blend well.
Drop teaspoons of mixture onto greased cookie sheets; flatten with a fork.
Bake for 20 minutes
Cool in pan for a few minutes.

Anzac biscuits have long been associated with the Australian Army Corps; established in World War 1. It has been claimed that the biscuits were sent by wives to soldiers abroad because the ingredients do not spoil easily and the biscuits kept well during naval transportation.
