6½ to 7 cups all-purpose flour
⅔ cup of sugar
1 t ginger
2 pkg Rapid Rise Dry Yeast
½ cup of pineapple juice
1 cup crushed pineapple ( chop in food processor)
¾ cup of potato flakes
1 t salt
2 t vanilla
1 cup milk
½ cup of butter

Grease three 8 or 9 cake pans. Lightly spoon flour into measuring cup; combine 3 cups of flour, potato flakes, sugar, salt, ginger & yeast. In a medium saucepan, beat milk and butter until very warm. 120 to 130ºf. Add warm liquid, pineapple, and juice, vanilla & eggs to the flour mixture. blend at low speed till eggs are beaten thoroughly - Beat 4 minutes at medium speed. Add 2 cups flour to form a stiff dough. Sprinkle 2 cups flour on the surface, Knead 7 or 8 times till smooth and elastic (5 to 8 minutes). Add more flour if needed. Place dough in a greased bowl ( twice the size of the dough.). Cover loosely with plastic wrap and cloth towel. Let rise in a warm place (85ºF) until light and doubled in size. (1 to 1 ½ hour. Punch down, divide the dough into 3 parts, form in round balls, place in greased cake pans. Cover and let rise in a warm place till double in size (about 1 hour) Heat oven to 375ºF. Bake 25 to 35 minutes or till loaves sound hollow when lightly tapped. Remove from pans immediately to toweling and cool.
