Matzo Balls Recipe

1 bag of mix from Streit's Matzo Ball Mix
2 large eggs
1/4 cup of vegetable oil
2 32 ounce cartons of Swanson Chicken Broth

Directions:
Directions:
1. In a medium bowl mix 2 large eggs with 1/4 cup of vegetable oil.
2. Add the contents of only one package and mix until uniform. Let stand 15 minutes.
3. In a large pot, with a tight fitting lid, bring 2 1/2 quarts of water and 8 ounces of Swanson Chicken Broth to a boil.
4. Using wet hands, form matzo mix into balls about the size of walnuts.
5. Drop balls into boiling water, cover tightly and reduce heat to a simmer, and cook for 30 minutes.

In a second pot,
1. Bring remaining 24 ounces of Swanson Chicken Broth and 32 ounce carton of Swanson Chicken Broth to a boil.
2. Add 12 ounces of baby-cut peeled carrots sliced into thirds into boiling broth. Cook until tender.
3. When Matzo Balls are cooked, place them into the chicken broth.
4. After cooled, place matzo ball and broth into the refrigerator.
