1 lb. of dry navy beans or great (not good, Great) northern beans (2 1/3 cups)
1/4 lb of salt pork, with the fat scored
1 large onion choppped
1/2 cup of molasses
1/3 cup of brown sugar
2 tablespoons dry mustard
1/2 teaspoon of salt
1/8 teaspoon of pepper

Rinse beans. Look for little rocks or dark beans and discard.

In a heavy 3 quart sauce pan, combine beans and 4 cups of cold filtered water. Soak overnight, (or for quick soak method, bring to boiling, simmer 2 minutes, turn off heat, let sit for 1 hour.) Do Not Drain.

Add 1/2 teaspoon salt to beans and soaking water. Bring to boiling. Cover, reduce heat and simmer in water used for soaking till beans are tender; 1 1/4 - 1 1/2 hours.

Drain off 1 cup of liquid but reserve it. Add the onions, molasses, mustard, salt & pepper, and brown sugar and stir until well blended. Put the scored salt pork in the middle.

Bake in a 300 degree F oven for 4 - 6 hours until most of the liquid is absorbed and beans are tender.
