3 large green tomatoes
salt
1 large egg
½ cup of buttermilk
¾ cup of cornmeal
½ cup all-purpose flour
½ t black pepper
Vegetable Oil for frying

Directions:
Directions:
Thinly slice tomatoes and salt on all sides. Let tomatoes sit for 10 minutes to draw moisture out. Combine wet ingredients (except oil) in one bowl and dry ingredients in the second bowl. Heat oil in a skillet. Dry tomatoes with a paper towel. Dip tomatoes in egg mixture and then in cornmeal mixture. Fry in hot oil for about 4 minutes on each side. Drain on paper towels. Great with the Remoulade Sauce. Recipe follows.
