6 medium-sized red potatoes
5 slices bacon
1/2 onion, chopped
1 Tbs. Wondra gravy flour
1/4c. vinegar
1/2c. chicken broth
1 tsp. sugar
chopped parsley, to taste
salt and pepper, to taste

Directions:
Directions:
1. Boil potatoes until tender - don't overcook.
Drain and cool. Cut into slices or chunks.

2. In a heavy skillet, cook bacon. Remove and
transfer to a plated lined with paper towels.
Reserve 1 Tbs. bacon drippings in skillet.

3. Sauté onion in skillet until tender. Sprinkle
flour over onions and stir well.

4. Add vinegar and chicken broth; stir and
bring to a simmer.

5. Add sugar, parsley, salt, pepper and bacon.

6. Add potatoes and mix to coat. Continue to
cook over low heat until potatoes are done.
