Salad

1 english Cucumber, cut lengthwise and then in ¼ slices
1 green pepper, cut into 1 inch pieces
2 cups of cherry tomatoes, cut in half
⅓ cup of red onion, cut in very thin slices
⅓ cup of kalamata olives
5 ounces of feta cheese, cut into ½ inch cubes
½ cup of fresh mint leaves

Dressing

1 clove of garlic, minced
½ cup of extra virgin flavourful olive oil
3 tbsp. of red wine vinegar
1 tbsp. lemon juice
½ tsp. dijon mustard
3 tsp. of fresh chopped oregano (or 3 tsp. of dried oregano)
½ tsp. sea salt
black pepper to taste

Directions:

1) Set aside the mint leaves. Stir all of the remaining salad ingredients together and refrigerate.

2) Set aside the olive oil. Stir the remaining dressing ingredients together. Using a whisk beat in the olive oil until it emulsifies.

3) At serving time, Top the salad with the fresh mint leaves and drizzle the dressing over the salad.
