2 c. sugar
1 c. oil
2 t. baking soda
1 t. cinnamon
3 c. grated carrots
1 t. vanilla
4 eggs
2 c. flour
dash of salt
1/2 t. allspice
1/2 c. pecans (optional)

Cream Cheese Frosting for tube cake:
1 - 8 oz. pkg. cream cheese, softened
1/2 stick butter, softened
8 oz. confectioner's sugar
1 t. vanilla

Cream Cheese Frosting for layered cake:
2 - 8 oz. pkgs. cream cheese, softened
1 stick butter, softened
16 oz. confectioner's sugar
1-2 t. vanilla

Cake:
Butter and lightly flour pan. (Can also use parchment paper for round pans). Mix all ingredients in order given. Bake in preheated 375º oven for 1 hour in 10" tube pan. Or bake in round cake pans about 20-25 minutes or until toothpick inserted in center removes clean. After removing from oven, let rest for 5 minutes then invert onto baking rack to fully cool.

Frosting:
With electric mixer, mix all ingredients for the cake pan type you are making and whip until fluffy and creamy. Spread on cake.
