Java Jester Broccoli Soup Recipe

1 large or 2 small heads of broccoli
4 carrots
2 stalks of celery
4 small onions
4 Tablespoons butter
6 cups chicken broth
¼ tsp. dried basil
¼ tsp. dried thyme
1/4 tsp. oregano
1 tsp. dried dill weed
½ tsp. salt
¼ cup all purpose flour
2 cups homogenized milk or half and half cream (optional) (I use 1 c. 5% cream)

1. Cut florets from broccoli. Peel broccoli stems and carrots. Cut broccoli stems, carrots and celery into one inch pieces.

2. Pulse ½ half of vegetables at a time in the food processor until coarsely chopped. Repeat with remaining vegetables. Set aside.

3. Cut onions in half. Place in a food processor and whirl till coarsely chopped.
Heat one Tablespoon of butter in a saucepan...saute onions until almost transparent, about 5 minutes.

4. Add all the vegetables to the onions and cook over medium heat for an additional 5 minutes till vegetables are slightly softened.

5. Stir in chicken broth and seasonings. Turn heat to high and bring to a boil. Reduce heat to low and simmer for 20 minutes.

6. To thicken soup, melt remaining butter in the microwave. Add the flour and stir until smooth. Increase heat of soup to medium until bubbling intensely. Slowly add the butter mixture while stirring constantly. Stir until mixture thickens and the flour is integrated (about 5 minutes).

7. Add milk or cream if wanted. DO NOT BOIL soup at this point.
Note: Soup can be frozen before the addition of milk or cream.

This soup was served in a popular Winnipeg restaurant. I first made this soup when the boys were babies...trying to get them to eat their vegetables.
