3 Medium tomatoes largely chopped

2 Large cucumbers sliced

1 Large onion Sliced into half rings

¼ C. Granulated sugar

¼ C. Olive oil

½ C. White distilled vinegar

1 C. WateR

1 tsp Basil (chopped)

Directions:
Directions:
Place the vegetables into a large mixing bowl and toss to combine.
Pour the water over the vegetables.
In a small bowl, combine the oil, vinegar, sugar, basil, and salt and pepper to taste. Whisk to combine well, and pour this over the vegetables in the bowl.

This was in Velda’s recipe box. Tippy Hedren was from Lafayette, MN and the from on this recipe was from her.
It’s a very simple recipe, but in the summer when the vegetables are fresh there is nothing like it! Very typical Minnesota favorite.
