2 cups pancake mix
1 teaspoon baking powder
⅛ teaspoon cayenne pepper
4 ounces butter, chilled
½ cup plain fat free Greek yogurt
⅓ cup shredded low fat cheese
¼ cup cooked bacon pieces

Directions:
Directions:
Mix dry ingredients in large mixing bowl. Use your hands to squish in the butter until it looks like sand. Add in yogurt and keep squishing until it looks almost like dry play dough. Stir in cheese and bacon.

Separate dough in half and pat each half into a flat circle about 1-inch high and 6-inches in diameter. I put mine on a pizza stone.

Bake for 25-30 minutes. They should be brown like a roasted marshmallow, not burnt or too pale.

Let stand for 5 minutes before cutting each scone circle into four into wedges.

Katharina says “I like everything in these. My little sister and Mama and Papa and Nana (great-grandmother) likes them too. I can make them all by myself. Mama helps put the pan in the oven and take it out. I can cut them up and set the timer too. I like squishing the mix with my hands.”
