1 cooked chicken (you can use rotisserie chicken from super market)
2 ribs of celery
1 Cup grapes cut in half
1/2-3/4 Cup mayonnaise
1/4-1/3 Cup white wine
salt and pepper to taste
couple shakes of Montreal Chicken seasoning
chopped pecans optional

Cook washed chicken in a pot with a few ribs of celery, small onion cut in quarters and a cut up carrot. Cover with water and bring to boil. Simmer for a couple hours until chicken starts to fall apart. Remove chicken and vegetables. Let cool. You know have the makings for a great pot of soup!! Chop up the vegetable if you want and leave in the broth. You can freeze this for another time when you need broth. Cool the chicken

Cut up the cooled chicken or shred it depending which you like best. Put a couple spoonsful of the broth to be sure the chicken is moistened. Add the celery and grapes. In a small container or bowl mix the seasonings, mayo and wine. Stir over the chicken until all combined. You can add the chopped nuts now if you want.

Take a large platter and cover it with a variety of lettuce. Mound the chicken salad up the center or middle. Cut up carrot sticks, red pepper slices, celery sticks, cucumber, radishes, whatever you might like and arrange in sections around the chicken. Also nice to have a few deviled eggs on the platter.

Makes a really nice lunch or cold Summer supper!
