Vanilla Bean Ice Cream Recipe

2 vanilla beans
1¾ C sugar
½ tsp salt
2 C half & half
4 C heavy cream
8 egg yolks, beaten
2 C peaches, pureed/chunked

Directions:
Add milk to a large pan. Split vanilla beans lengthwise and using a spoon, scrape vanilla beans into milk and add pods.

Scald milk on low until bubbles form around edges of pan.

Remove from heat. Add sugar and salt and stir until dissolved.

Stir in half and half and heavy cream. Cook over medium heat stirring constantly for about 4 minutes.

When mixture is hot, slowly whisk about ⅓ cup of cream mixture into eggs to temper. Whisk about another ⅓ cup of cream into eggs, and then add egg mixture back into the cream mixture, mixing thoroughly.

Let cool on the counter for 30 minutes, stirring occasionally.

Refrigerate for an hour, stirring occasionally.

Add fruit if desired (below) and pour into ice cream maker. Follow your ice cream maker's directions.

Strawberry: add 1 C pureed strawberries per quart to chilled mixture before freezing.
Banana: add mashed bananas (3 C for 4 qt, 3½ C for 5 qt, or 4 C for 6 qt) to chilled mixture before freezing.
Peach: Add pureed/small chunks peaches (1 C per qt) to chilled mixture before freezing.
