2 oz margarine
6 oz sugar
1 egg
Zest of one orange
3 tbsp orange juice
2 tbsp milk
7 oz self raising flour
Directions:
Directions:
Beat margarine and sugar well together with zest of orange and juice. Add egg followed by flour. Place in 7 inch square tin lined with baking parchment.

Bake at 180 c for about 20 minutes or until it feels firm.

When cake is cool prick all over with a fine needle and spoon remaining orange juice over the cake.
