12oz (340g) mixed dried fruit (currants, sultanas, raisins & cut peel)
2oz (50g) glace cherries
2 – 3 medium sized cooking apples
1oz (30g) walnuts (optional)
4oz (113g) shredded suet
8oz (225g) soft brown sugar
Grated rind and juice of one lemon
1 level teaspoon mixed spice
½ level teaspoon ground cinnamon
Brandy, rum or sherry to mix

Prepare fruit, chop raisins & cherries. Grate peeled apples on a coarse grater and put in a roomy bowl with the fruit, suet, sugar, lemon juice and rind. Add the spices and a tablespoon or two of any chosen spirit to bind it all together and mix thoroughly.
Cover the bowl with a clean cloth and leave for 24hours. Stir well again and put in 1lb jars. Cover as for jam.
This makes approx. 2lbs. It will keep in the fridge for 6 – 8 weeks or if put in suitable containers it freezes well.

Recipe given to me by a friend called Dottie in Ayrshire over 40 years ago. Its origins are unknown by her but certainly it was passed down.
